Coconut Lamingtons
Ingredients
- 4 eggs
- 12 tbsp sugar
- 12 tbsp flour
- 12 tbsp oil
- 12 tbsp milk
- 0.5 tsp baking powder
- 8.8 oz (250 g) margarine
- 7.1 oz (200 g) cooking chocolate
- 0.8 cups (2 dl) milk
- 8 tbsp sugar
- Desiccated coconut
Steps
- Prepare a baking pan, grease it, and preheat the oven to 356°F (180°C) (350°F).
- Separate the egg whites from the yolks.
- Beat the egg whites into stiff peaks using a mixer.
- Gradually add 12 tablespoons of sugar while continuing to beat.
- Add the egg yolks one at a time and beat until well combined.
- Mix in 12 tablespoons of oil and 12 tablespoons of milk.
- Add the sifted flour mixed with baking powder and gently fold together with a spatula.
- Pour the batter into the prepared pan, smooth the top, and bake in the preheated oven at 356°F (180°C) for about 20-25 minutes until golden brown.
- Remove the baked sponge cake, let it cool, and cut it into equal-sized cubes.
- In a pot, combine the margarine, cooking chocolate, 0.8 cups (2 dl) of milk, and 8 tablespoons of sugar, then heat on the stove while stirring until everything is melted and combined.
- Dip each sponge cube into the warm chocolate mixture, then roll them generously in the desiccated coconut.
- Let the lamingtons cool and set before serving.
