- 6-7 eggs
- Store-bought phyllo dough sheets for gibanica
- Cheese (about 11–14 oz (300-400 g))
- 2 large tablespoons kajmak (clotted cream)
- Sparkling mineral water
- Oil
- A little milk
- Sesame seeds (optional for sprinkling)
Steps
- Grease a pot or small baking dish well with oil.
- In a deep bowl, crack 6 to 7 eggs, lightly salt them, and whisk with a wire whisk.
- Add the cheese to the beaten eggs and combine the mixture.
- Add two large tablespoons of kajmak and a little milk, then mix well to combine.
- Place two phyllo sheets at the bottom of the greased pot to cover the base, and sprinkle them with sparkling water and oil.
- Crumble the remaining phyllo sheets individually, dip them into the prepared egg, cheese, and kajmak mixture, and arrange them side by side in the pot.
- Pour any remaining filling over the assembled sheets and fold the hanging edges of the phyllo over the top.
- Sprinkle the top with a little more sparkling water, oil, and sesame seeds.
- Place in a preheated oven and bake for about 20 to 25 minutes until nicely golden brown.
- Remove from the oven, let cool slightly, cut into squares, and serve.
